What an Upscale Restaurant Learned About the True Cost of Washdown Equipment

The Application

Washdown equipment is part of the operating infrastructure in commercial foodservice operations. When that equipment fails repeatedly, the impact extends beyond the cost of replacement. The executive chef at one of the world’s largest upscale steakhouses oversees a large commercial kitchen where the facility uses washdown equipment throughout. The kitchen uses two 50-foot hose systems positioned in different areas because a single hose cannot reach the entire operation. The hot-water hose can reach temperatures approaching 200°F.

The Challenge

Upscale Steakhouse had experienced repeated problems with washdown nozzles that could not withstand the demands of the application.

Some of the nozzles previously used at the restaurant lasted less than two months. The restaurant then tried additional lower-cost replacements, but the short service life continued.

Leakage was the primary failure mode. Some nozzles began leaking during normal use, while others developed leaks after being dropped, an everyday possibility in a busy kitchen where equipment is moved and handled throughout the cleaning process. One replacement nozzle leaked right out of the box before it even entered regular service.

The kitchen team attempted to keep the equipment in service rather than continually discard it. Executive Chef saved parts from one defective nozzle and later used them to repair another unit. The repeated cycle of troubleshooting, repairing, and replacing nozzles became an ongoing source of frustration.

The Solution

At Upscale Steakhouse, those conditions include frequent daily use, hot water, repeated handling, and the likelihood that a nozzle will occasionally be dropped. In that environment, durability is not simply a desirable feature. It directly affects whether the equipment can perform its intended role consistently.

Executive Chef was already familiar with Strahman washdown equipment from earlier in his career and believed the kitchen needed a more durable solution. After continued issues with the lower-cost nozzles, he contacted Strahman directly and selected the HP-150 washdown nozzle.

The Results

The performance difference was immediate.

When asked how the Strahman nozzle had performed, Executive Chef described the experience as “perfect,” with no leaks or other problems. At the time of the interview, the restaurant also had a backup Strahman nozzle that had not yet been installed.

The nozzle had also demonstrated durability under normal kitchen conditions.

Executive Chef noted that nozzles inevitably hit the ground from time to time as employees move through cleaning tasks. Despite those impacts, he described the Strahman nozzle as very sturdy and reported no cracking or breaking of the outer cover.

That performance reinforces an important lifecycle consideration. Reliability reduces more than replacement purchases. It can also reduce the recurring labor associated with diagnosing leaks, attempting repairs, finding replacement parts, and sourcing new equipment.

The earlier nozzles carried a lower initial price, with Executive Chef recalling costs in the $200 to $250 range for some units. The Strahman nozzle represented a higher initial investment.

But the initial purchase price was only one part of the value equation. When equipment requires repeated attention after only a short period of service, the apparent savings can erode quickly.

When asked whether the Strahman nozzle was worth the additional cost based on performance and quality, Executive Chef’s response was unequivocal: “Absolutely, yeah, 100%.”

The Takeaway

The Upscale Steakhouse experience illustrates a broader principle for commercial kitchens and other washdown-intensive environments: evaluate equipment by how well it supports the operation over time, not simply by its initial purchase price.

For products used every day, durability, service life, maintenance requirements, and reliability become operational considerations, not just product specifications.

In this case, repeated nozzle failures turned a relatively simple piece of washdown equipment into a recurring maintenance issue. Selecting equipment better suited to the actual operating environment changed that experience.

The lesson is straightforward: lifecycle value matters most when the equipment is expected to perform every day.
